Meet One of Onslow County’s Favorite Craft Distillers

Onslow - Faces of Travel - Don Walton - REV1
What brought you to Onslow County?

I am a native of Jacksonville, NC and moved back here after living in Kentucky for a few years. I originally moved to a small town just east of Lexington, Kentucky to work for a relative.  He sold his business and I decided to go to law school. Living close to Lexington drew me to attend University of Kentucky and upon graduation I returned here to practice.

During my stay in Kentucky as a hobby I toured a lot of the distilleries. My favorite were the bourbon distilleries. I developed an interest in eventually opening a Distillery of my own.

I guess returning to Jacksonville was an easy decision for me.  Almost all of my family lives here and I missed our moderate climate.

What led you to start Walton’s Distillery?

Shortly after returning to North Carolina I started looking into opening a Distillery. The State was not too helpful at that time and simply referred me to the federal government. I was given lots of misinformation which resulted in the project being placed on the back burner for more than a decade.

In 2005 I incorporated Walton’s Distillery, Inc. and each year set small and specific milestones to complete in working for establishing the Distillery.

What contributes to your passion for distilling?

My mother’s family has made Moonshine for generations. I knew that prior to touring the distilleries in Kentucky and learning the various methods that are used by different companies led me to develop a passion for making spirits.

What is your favorite part of owning Walton’s Distillery?

The most favorite part of owning the Distillery is sharing the stories and talking about the process to the interested public. I am not always the tour guide to our visitors but when I get the opportunity I tend to take twice as long in describing everything.  Meeting the people is the most rewarding part of the business.
